Chocolate and Orange Meltaways

For the Centers: 2 cups white chocolate chips (reserve 2 tablespoons for the decoration) ½ cup (1 stick) unsalted butter 1/3 cup whipping cream 1 ½ teaspoon orange extract For the Coating: 1 cup bittersweet chocolate 1 teaspoon shortening For the Decoration: 2 tablespoons white chocolate chips 1 teaspoon shortening Line a baking sheet with wax paper and set aside 2 tablespoons of the white chocolate chips. (I set aside a little more than 2 tablespoons, but I don’t think that quite matters all that much.) Combine the butter and whipping cream in a medium saucepan.  Cook over low heat, stirring constantly until the mixture comes to a full rolling boil.  Remove from heat.  Immediately add the remaining white chocolate chips.  Stir until smooth.  Add the orange extract and blend well.  (I added extra orange extract, just a tad more.  It certainly didn’t hurt the recipe any!) Refrigerate until firm enough to handle, about 2 hours.  Taking a small amount of the mixture at a time, shape into 1-inch balls.  Place on the prepared baking sheet.  Refrigerate until firm. Combine the chocolate and 1 teaspoon of shortening in a microwavable bowl.  Microwave on high in 30 second intervals until the mixture is melted and smooth. Dip the prepared orange-flavored balls in the chocolate coating, scraping the bottom on the lip of the bowl to remove excess coating.  Refrigerate until the coating is firm, at least 1 hour Place the reserved white chocolate chips and the remaining 1 teaspoon of shortening in a microwaveable bowl.  Microwave on medium in 30 second intervals until the mixture is melted and smooth.  (I misread the original recipe, as it was slightly confusing.  Originally I didn’t add the shortening to this mixture and came out with a crumbly version of what once were white chocolate chips.  At the prodding of my mother, I reread the recipe very carefully and realized my mistake.  I then added the shortening to the crumbly but warm concoction, reheated it in the microwave and it came out fairly smooth.  Smooth enough, anyway!) With a fork, drizzle the melted white chocolate chips over the candies.  Refrigerate until set, about 20 minutes. Despite my problems with the white chocolate, these truffle-like candies turned out wonderfully!  There were only about 20 candies, so I would recommend doubling the recipe, especially if you have someone in the house who adores all things chocolate.  Add orange to the mix and my father is in seventh heaven!  I don’t expect these candies to last very long at all.May The Chocolate Be With You!

Chocolate Chip Cookie Dough Truffles

1 stick unsalted butter at room temperature 1 cup brown sugar 1 ½ teaspoon vanilla extract 1/8 teaspoon salt 2 cups flour 14 ounce can sweetened condensed milk 1 cup semi-sweet chocolate chips, crushed into small chunks (I used Nestles mini chocolate chips.  They were perfect and just so cute!) 2 cups 60% bittersweet chocolate chips 2 teaspoons shortening Chocolate Chip Cookie Dough TrufflesUsing a mixer, beat the butter and brown sugar together until fluffy.  Add the vanilla, salt and flour; mix well.  With the mixer on low, add the condensed milk until the batter is thoroughly combined.  Fold in the chocolate chips (knowing me, you have to realize that I didn’t use just 1 cup of the chocolate chips.  That didn’t look like enough chocolate to me, so… I added a few more). Refrigerate this mixture for at least 15 minutes before working with it. Using a tablespoon, shape into evenly sized balls and place on a wax paper lined baking sheet.  If the dough is sticky, coat your hands with either flour or cooking spray.  Loosely cover with plastic wrap and refrigerate the balls for 3 hours, or up to overnight. To make the chocolate coating, combine the bittersweet chocolate and the shortening in a microwavable bowl.  Microwave on high for 30 second intervals until the mixture is melted and smooth.  Using a toothpick or fork, dip the dough balls in the chocolate to coat.  Drag the bottom across the lip of the bowl to remove excess chocolate coating.  (This is yet another way to temper chocolate.  I’m still looking for a temper I like, but this wasn’t bad.  Personally, I’m leaning in favor of a simple pure chocolate temper.  I’ll blog later about different ways to temper chocolate, but for now, I suggest tempering with butter, shortening or just a few chocolate chips dumped into the melted chocolate.)  Place the truffle back on the baking sheet. Once all the truffles are coated, refrigerate until firm. Store the truffles in an airtight container in the refrigerator for up to 2 weeks. This recipe says it makes about 42 1-inch truffles.  For once the recipe didn’t lie!  I had a few more than 42, but that was a good estimate. In my memory, I have never used, nor seen, condensed milk.  I was rather shocked by its viscous appearance and downright stickiness.  It looked like glue to me.  It made the dough taste pretty good, though! I absolutely adore making candies and truffles are some of my favorite to make!  These were difficult for me, though.  Not technically difficult, mind you, just difficult.  I love cookie dough!  It was hard for me not to just eat the cookie dough and forget about making the truffles.May The Chocolate Be With You!
